MORE ABOUT THE SPEAKERS

Jared Ingersoll trained as a chef in London at renowned restaurants such as Mezzo, Hilaire and The Square. After travelling to Sydney, he became head chef at Bayswater Brasserie and in 2002 opened his own cafe and cocktail bar, Danks Street Depot, in Waterloo. Later this year, Danks Street Depot will launch at the Sydney International Airport. Ingersoll is committed to ethical and sustainable food principles, representing the restaurant industry on the Nature Conservation Council’s ‘Nice Choice’ sustainable seafood project.

Alison Drover, director of The Alison Principle, provides food and lifestyle consulting to caterers, restaurants and corporations. While supplying competitive, original menu designs, she helps clients reduce their carbon footprint. A former chef, marketing strategist and event designer, Drover is the co-convivium leader for Slow Food Sydney which promotes the taste and quality of naturally produced, properly prepared food. She also champions projects such as school gardens and helps raise the profile of indigenous food culture and sustainability.

Nick Ritar is a permaculture educator, design consultant and farmer. His professional background is in production management for large arts organisations and as a groundbreaking educator in community technology and communication. He is a co-director of Milkwood, a permaculture demonstration site in Central West NSW, that supplies educational courses and offers system design. He’s involved in a wide range of sustainable agriculture, land stewardship, food production and community resilience practices for both the rural and urban sectors.

Arthur Koutoulas established his design studio in Sydney in 1992, operating as a boutique design consultancy that distinguished itself by its forward-thinking approach to hospitality, retail and furniture design. Koutoulas has produced individualistic interiors and furniture, using low-cost materials, for various restaurants, bars and cafes, including Kafa Espresso Bar, Ten Buck Alley cafe and Bar Cleveland. He has been featured in publications both nationally and internationally and is the recipient of several design awards.

Through a dynamic array of fashion garments, textile objects, photography, illustration and time-base media, Fashioning Now highlights the diversity of sustainable options being explored by designers, researchers and manufacturers, while predicting possible scenarios for a future fashion industry.

One way or another, graphic design permeates almost every aspect of our daily lives. Perhaps it’s time that designers the world over engaged in a meaningful dialogue to provide ideas and inspiration to acknowledge and address climate change and over-population. This conference provides graphic designers and the broader community with a framework and platform for discussing some fundamentally important global challenges and making a meaningful and useful contribution towards the planet’s future.
The conference will feature a range of presentations from leading designers, environmentalists, the business sector and education and will conclude with a panel and audience discussion chaired by ABC Radio’s Alan Saunders.

Sustain me: contemporary design explores the conventional role design and designers play in creating and developing a deeper understanding of sustainability. CULTURAL DESIGN: DAVID TRUBRIDGE
New Zealand designer David Trubridge addresses how ecodesign (however worthy) is not enough unless it also addresses some form of cultural/spiritual nourishment. Says Trubridge: “Design is looking for new meaning and relevance. In the past all cultures were defined and expressed by their artifacts and art… we too could find cultural and spiritual nourishment from long lasting objects and this may reduce the never-fulfilled craving for consumer goods.”

GLENN MURCUTT: ARCHITECTURE FOR PLACE

Glenn Murcutt’s groundbreaking designs are internationally recognised as being at the very forefront of contemporary architecture. His work is celebrated for its sustainability, harmony with the natural world, and resonance and unity with Australia’s diverse climate and topography.

This a special exhibition that reveals the way Murcutt crafts his projects, with a selection of ideas presented from initial sketch to detailed construction drawings, and final built work. A series of photographs by Anthony Browell completes the show.
